APPLE CHICKEN SALAD

When I make salads (which, is at least every other day), I’m always scrounging my refrigerator for leftovers or ingredients to throw in. I typically have some kind of protein in the fridge – salmon, chicken, beef, etc.  So then I just have to figure out what flavors pair well…and what I’m in the mood for.


After a little investigating yesterday I realized I had some apples that needed to be eaten. So that became salad priority #1. Then, I saw leftover shredded chicken from my slow-cooker rotisserie chicken recipe in the fridge. Hmm, I could tell an apple chicken salad was gonna be in the works.



A little more digging unearthed some onions, raisins, dried cherries and walnuts. See how simple that was? The most complicated part (and really, it’s not complicated) was whisking together the apple cider vinaigrette.
In the end, I enjoyed a beautiful and delicious apple chicken salad loaded with nutrients, crunch and flavor.

INGREDIENTS
  • 5 cups mixed lettuce
  • 1 cup chicken, shredded (recipe can be found here)
  • 2 apples, diced
  • 1/4 onion, diced
  • 1/4 cup raisins
  • 1/4 cup dried cherries
  • 1/4 cup walnuts
  • Apple Cider Vinaigrette:
  • 1/3 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1 tbsp honey
  • 1/2 tsp Dijon mustard
  • 1 clove garlic, minced
  • salt and pepper, to taste

INSTRUCTIONS
  1. Divide the lettuce between two plates.
  2. Top the lettuce with the remaining ingredients, divided between the plates.
  3. Mix the vinaigrette ingredients together and drizzle on top of the salads.
