SLOW COOKER ROTISSERIE CHICKEN

This slow cooker rotisserie chicken is juicy on the inside with delicious, herbed, crispy skin on the outside. It’s a slow cooker chicken recipe favorite.

When I learned that you could make a rotisserie-style chicken in a slow cooker, my whole world opened up. For a busy gal like me, this meant that I could put a whole chicken in the slow cooker in the morning…and come home to a lovely, completed dinner eight hours later. Magic! That’s about the best use of eight hours that I can think of!


But there are some tricks to a perfect slow cooker rotisserie chicken.

Trick #1 – Loosely scrunch up 5-6 balls of aluminum foil in the bottom of the slow cooker. This allows the juices to pool at the bottom and steam cook the chicken.
Trick #2 – Broil the top of chicken in the oven for approximately 5 minutes before putting it in the slow cooker. This will give your chicken that golden, crunchy skin. Pre-broiling in the oven is not necessary, but your chicken will not crisp up as well without it.
Trick #3 – Enlist additional help removing your chicken (that is, if you would like it to remain in one piece!). I kid you not, your chicken will be JUICY! More juicy than any rotisserie chicken you’ve ever bought at the supermarket. It will break apart as soon as you attempt to remove it from the slow cooker. Which, of course, is not the end of the world. It will still taste delish!
So give this recipe a try. I think you’ll soon be hooked like me!
Oh, the other good part – if you’re a party of one (like me)…you’ll have lots of leftovers! Shred the leftovers while still warm and you’ll have delicious, herbed chicken to top salads and other dishes. It’s meal prep goodness and makes whipping up recipes like my yummy Apple Chicken Salad a breeze.

INGREDIENTS

  • 1 organic whole chicken
  • 1 tbsp olive oil
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 tsp garlic, granulated
  • salt and pepper

INSTRUCTIONS
  1. Turn the upper broiler on in your oven.
  2. Ensure that the giblets have been removed from the cavity of the chicken. Place the chicken on a roasting tray and rub the olive oil into the chicken.
  3. Sprinkle all of the herbs and spices onto the chicken. You can add more or less based on your preference.
  4. Broil the chicken for approximately 5 minutes, or until golden.
  5. While the chicken is broiling, ball up 5-6 pieces of aluminum foil and place in the crock pot.
  6. Remove the chicken from the oven and carefully place into the crock pot, being careful as it will be hot.
  7. Add the lid to the crock pot and cook the chicken on low for 7-8 hours, depending on the size of your chicken. When done, carefully remove and serve.
